The Best Breakfast for Busy People

Ever catch yourself rushing out the door in the morning, scarfing down a granola bar or sugar-ridden pastry? As the saying goes, breakfast is one (if not), the most important meal of the day! Especially as a busy college student, I found meal prepping to be super helpful.
So next time you’re in a rush, try out my super simple, healthy, nutrient-packed overnight oats recipe that will guarantee to keep you full throughout the day and out the door in no time! Just prep them the night before, and your future morning self will thank you later :)
Let’s get down to the #dEATS:
½ cup rolled oats
1 scoop of vegan protein powder (linked my favorite protein powder -- super clean, minimal ingredients)
½ banana, mashed *KEY ingredient
Roughly ½ - 1 tbsp of hemp and chia seeds (you can throw in some flax seeds, too if you’re feeling it)
Sprinkle of cinnamon
Dash of vanilla extract
Roughly ½ cup of almond milk (just enough to cover the oats)
Directions:
Combine all ingredients in an air-tight container or mason jar. Give it all a good stir, pop it in the fridge overnight and let time do its magic ✨
In the morning, I top it off with some fresh berries, a generous drizzle of peanut butter (you can also use almond butter or any other nut butter of choice), a sprinkle of cinnamon, and voila!
The layers of toppings make it feel like you are digging right into a cake. So... you’re basically eating a healthy dessert for breakfast, right? Can’t get any better than that :)
The banana provides the oats with a natural sweetness and complements well with the vanilla extract. Then, the combination of the protein powder and omega-3 rich seeds provides a natural boost of protein and healthy fats to keep your tummy nice and satiated for hours.
